Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. At noon, mix the bread dough with sugar, butter, and egg while slightly warm.

  2. Knead on a floured surface until stiff, then let rise until 4 o'clock.

  3. Knead again and roll out to a ¼ inch thick sheet.

Shape and bake

  1. Cut into pieces to fit baking pans, brush lightly with melted butter, and let rise for 1 hour.

  2. Preheat the oven to 400°F (200°C).

  3. Score the pieces across and bake for 15 minutes.

  4. Once done, brush with a mixture of syrup and water, then dust with cinnamon and powdered sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread dough
Provides the soft, yeasted structure that rises and bakes into the cake.
Sugar
Adds sweetness and helps the crust brown during baking.
Butter
Adds fat for richness and a tender crumb.
Egg
Adds richness and helps bind the dough.

The step that matters

Rising times. The dough must rise fully at each stage so the cake becomes light and airy. Rising under-proofed dough leaves a dense result, while over-proofing can collapse the structure before baking.

Swap the cinnamon

How well each one fits the dish's main ingredients (bread, sugar, butter, egg, flour, syrup):

  1. Cinnamonthe original
  2. Nutmegfits about as well
  3. Capersfits less well
  4. Gingerfits less well

Fit is the average pairing score against bread, sugar, butter, egg, flour, syrup. Candidates are from the same food group and used in at least 100 recipes.
