Cheese Cakes

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the milk.

  2. Beat 4 eggs and stir them into the boiling milk until thickened, then remove from heat and let cool.

  3. Mash the curd very fine.

  4. Crumb the bread and mix it with the curd.

  5. Cream the butter and sugar together.

  6. Add the curd and bread mixture to the creamed butter and sugar.

  7. Whisk the remaining 4 eggs until thick and light, then pour them into the mixture.

  8. Gradually add the brandy, wine, rose-water, and spices, then fold in the currants.

  9. Line small, square tin pans with pastry, fill with the mixture, and fold the pastry over to form a half circle.

  10. Bake in a 400°F (200°C) oven until golden.
