Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Scald the bread crusts or soft crackers in boiling milk.

  2. Add the butter, salt, eggs, sugar, and cinnamon to the mixture.

  3. Fold in the stoned cherries.

Bake

  1. Pour the mixture into a baking dish and bake at 400°F (200°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crusts or soft crackers
Soak up the hot milk to form a soft, tender base for the pudding.
Eggs
Set during baking to give the pudding its structure.
Milk
Provides the liquid that soaks the bread and helps form a custard-like texture.
Sugar
Adds sweetness and helps keep the pudding tender.
Stoned cherries
Add fruit flavor and moisture throughout the pudding.
Butter
Adds richness and fat for a softer, more tender crumb.

The step that matters

Bake until set. Eggs set as they heat, so underbaking leaves the pudding loose and wet in the middle, while overbaking can make it dry and rubbery.

Swap the cinnamon

How well each one fits the dish's main ingredients (bread, milk, egg, butter, sugar):

  1. Cinnamonthe original
  2. Nutmegfits about as well
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against bread, milk, egg, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
