What each ingredient does

Egg yolks
Thicken the soup and give it a smooth, rich body when gently heated.
Cream
Adds richness and a silky mouthfeel to the finished soup.
French roll crumb
Acts as a thickener, helping the purée hold body as it is rubbed through.

The step that matters

Stirring the egg mixture into the soup. Egg yolks thicken by gentle heat, but if the soup is boiled hard after they are added they can scramble and curdle, leaving a grainy texture instead of a smooth, creamy one.

Swap the peas

How well each one fits the dish's main ingredients (asparagus, egg, cream, sugar):

  1. Almondfits better
  2. Hazelnutfits better
  3. Chestnutfits better
  4. Peasthe original

Fit is the average pairing score against asparagus, egg, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
