Coffee Cake

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a bowl, combine ½ cup butter, ½ cup sugar, the yolks of 2 eggs, and the white of 1 egg. Work thoroughly.

  2. Set the mixture aside to rise until light.

  3. Handle the dough carefully; do not work or roll it.

  4. Shape the dough into cakes with your hands and place them into greased pie plates.

  5. Grease the tops with butter and sprinkle with a mixture of fine bread crumbs, sugar, and cinnamon.

  6. When perfectly light, bake in a preheated oven at 400°F (200°C) for 20 to 25 minutes.
