What each ingredient does

Peaches
Form the fruit body of the pickle, softening and absorbing the spiced syrup during cooking.
Sugar
Adds sweetness and helps preserve the fruit and thicken the syrup.
Vinegar
Adds acidity that gives the pickle its tang and helps preserve it.
Whole cloves
Contribute warm, aromatic spice flavor to the syrup.
Cinnamon stick
Contributes warm, sweet aromatic flavor to the syrup.

The step that matters

Boiling the peaches on the third morning. Boiling for only about five minutes softens the fruit without breaking it down. Boiling too long can turn the peaches mushy and overcook the syrup.
