Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the egg yolks, grated potatoes, salt, cinnamon, and lemon rind; mix well.

  3. Stir in the bread crumbs and the beaten egg whites gently.

  4. If desired, add the almond meal and bitter almonds to the mixture.

Bake and serve

  1. Pour the mixture into a baking dish and bake at 350°F (175°C) for 60 to 70 minutes, or boil for 2 hours.

  2. Serve with stewed prunes or apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving the pudding a light, tender crumb and rich flavour.
Egg yolks
Enrich the batter and help it set into a custard-like texture as it cooks.
Egg whites
Whipped into the batter to add lift and a lighter, airier structure.
Grated potatoes
Add body and moisture, giving the pudding a dense, soft texture.
Bread crumbs
Absorb moisture and add bulk, helping the pudding hold its shape.

The step that matters

Folding in the beaten egg whites. Stirring the whites gently keeps the air bubbles they hold intact. Overmixing deflates them, so the pudding bakes denser and less light.
