Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the egg yolks, grated potatoes, salt, cinnamon, and lemon rind; mix well.

  3. Stir in the bread crumbs and beaten egg whites gently.

  4. If desired, mix in the almond meal and bitter almonds.

Bake and serve

  1. Pour the mixture into a baking dish and bake at 350°F (175°C) for 60 to 70 minutes, or boil for 2 hours.

  2. Serve with stewed prunes or apple sauce.

What each ingredient does

Butter
Creams with sugar to trap air, giving the pudding a light, tender body.
Egg yolks
Enrich the batter and help it set into a custard-like texture when baked.
Egg whites
Whipped and folded in, they add lift and an airy, light crumb.
Grated potatoes
Add moisture and body, giving the pudding a dense, soft texture.
Bread crumbs
Absorb liquid and add bulk, helping the pudding hold its shape.
Sugar
Adds sweetness and helps the butter cream to a light, fluffy texture.

The step that matters

Folding in the beaten egg whites. Stirring them gently keeps the air bubbles intact. Overmixing deflates the whites, so the pudding bakes up denser and less light.
