A Good French Rice Pudding, or Gatea J De R1z

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the rice base

  1. In a pot, swell the rice in the milk (or milk and cream) until tender.

  2. Add butter, sugar, salt, and lemon rind.

  3. Simmer until rice is fully swollen.

  4. Remove from heat.

  5. Let cool slightly.

  6. Stir in the egg yolks gradually.

Bake

  1. Coat a small baking pan with clarified butter.

  2. Sprinkle the pan with bread crumbs.

  3. Whisk the egg whites until stiff.

  4. Gently fold the egg whites into the rice mixture.

  5. Pour the mixture into the prepared pan without disturbing the crumbs.

  6. Bake in a preheated oven at 350°F (175°C) for 1 hour until browned and firm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Swells in milk to form the tender, creamy body of the pudding.
Milk
Cooks with the rice to provide moisture and a soft, custardy texture.
Egg yolks
Thicken and enrich the mixture, helping it set firm when baked.
Egg whites
Whipped and folded in to lighten the mixture and help it rise in the oven.
Sugar
Sweetens the pudding and contributes to browning on the surface.
Butter
Adds richness and fat, giving a tender texture and rounded flavour.

The step that matters

Folding in the egg whites. Whipped whites hold air, which lifts the pudding while it bakes. Folding gently keeps that air in; stirring vigorously deflates the foam and leaves a denser, flatter result.

Swap the lemon
