Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the hot milk to form the body of the batter.
Eggs
Yolks enrich and bind the batter, while whipped whites lighten it and help it rise.
Milk
Softens the bread crumbs and adds moisture to the batter.
Currants
Provide tart, chewy fruit pieces scattered through the fritters.
Prepared flour
Helps bind the batter and gives the fritters a sturdier structure.

The step that matters

Folding in the egg whites. Stiffly beaten whites hold air that lightens the batter. Stirring them in vigorously deflates the foam, leaving dense fritters. Fold gently so the batter stays airy.

Swap the currant
