Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the main structure that holds the pudding together as it cooks.
Molasses
Adds sweetness, moisture and a deep dark color to the pudding.
Baking soda
Reacts with the molasses to produce gas that helps the pudding rise and lighten.
Huckleberries
Add fruit flavor, moisture and tart bursts throughout the pudding.
Milk
Adds moisture and helps form a soft, cohesive batter.

The step that matters

Pour the mixture into a well-buttered mold. Butter creates a barrier so the pudding releases cleanly after steaming. Skipping or skimping on it can make the dense batter stick and tear when unmolded.

Swap the clove

How well each one fits the dish's main ingredients (flour, molasses, milk, cinnamon, butter):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against flour, molasses, milk, cinnamon, butter. Candidates are from the same food group and used in at least 100 recipes.
