What each ingredient does

Eggs
Bind the mixture and set it into a firm, sliceable pudding as they cook.
Bread crumbs
Add bulk and absorb moisture, giving the pudding body.
Beef kidney suet
Adds richness and moisture, keeping the pudding tender as it steams.
Rice flour
Adds structure and a light, fine texture to the set pudding.
Lemon marmalade
Adds sweetness, acidity and fruity aroma to the pudding.

The step that matters

Covering the mold for boiling. The buttered paper and floured cloth let the pudding steam without the batter swelling against a sealed lid, which keeps the texture even during the long boil.
