Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Grate the raw carrots using a circular grater.

  2. In a bowl, combine the grated carrots, grated bread, nutmeg, cinnamon, sugar, salt, milk, eggs, and melted butter.

  3. Mix well until fully combined, adding cream as needed to achieve a smooth consistency.

Bake and serve

  1. Pour the mixture into a baking dish lined with puff pastry.

  2. Bake in a preheated oven at 350°F (175°C) until set.

  3. Serve hot.

What each ingredient does

Eggs
Set the pudding into a firm custard as they cook, and bind the mixture together.
Grated bread
Absorbs the milk and butter to give the pudding body and a soft crumb.
Raw carrots
Supply the main flavour and moisture, becoming tender as the pudding bakes.
Sugar
Adds sweetness and helps the pudding brown lightly at the surface.
Butter
Adds richness and fat, giving a tender texture and rich flavour.

The step that matters

Bake until set. Eggs thicken as they heat, so underbaking leaves the pudding runny in the centre while overbaking can make it dry and rubbery. Check that the centre is just firm before removing it from the oven.
