Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Combine the chopped suet, raisins, currants, bread crumbs, and flour in a large bowl.

  2. Add the eggs, grated nutmeg, mace, cinnamon, salt, and milk, and mix well until combined.

Steam and serve

  1. Pour the mixture into a greased pudding mold.

  2. Cover the mold with a cloth and steam for about 3 hours.

  3. Let it cool slightly before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Suet
Adds fat that keeps the pudding moist and rich as it steams.
Eggs
Bind the batter and help it set firm during steaming.
Bread crumbs
Absorb liquid and give the pudding a light, tender body.
Flour
Provides structure so the pudding holds its shape when turned out.
Raisins
Add concentrated sweetness and chewy texture.

The step that matters

Steaming the mold. Steaming gently over a long period cooks the eggs and starches through without drying the pudding. If the water boils dry or the mold is left uncovered, the pudding can dry out or cook unevenly.

Swap the mace

How well each one fits the dish's main ingredients (raisin, currant, bread, flour, egg, nutmeg, cinnamon):

  1. Allspicefits better
  2. Clovefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against raisin, currant, bread, flour, egg, nutmeg, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
