Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the sweet milk and molasses.

Make and bake the cake

  1. In a separate bowl, combine the cinnamon, baking soda, ground cloves, and chopped raisins.

  2. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  3. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air, giving the cake a light, tender crumb and rich flavor.
Eggs
Bind the batter and add structure as the cake sets in the oven.
Baking soda
Reacts with the acidic molasses to produce gas that helps the cake rise.
Molasses
Adds moisture, deep sweetness, and a dark color to the cake.
Sugar
Sweetens the batter and helps it hold air when creamed with butter.

The step that matters

Gradually add the dry ingredients to the wet mixture, mixing until just combined.. Adding flour-based mixtures in portions and stopping once combined keeps the batter smooth and limits gluten development, which would otherwise make the cake tough.

Swap the clove

How well each one fits the dish's main ingredients (butter, sugar, egg, milk, molasses, cinnamon, raisin):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against butter, sugar, egg, milk, molasses, cinnamon, raisin. Candidates are from the same food group and used in at least 100 recipes.
