What each ingredient does

Rice
Starch that thickens as it cooks, giving the croquettes a soft, creamy body inside.
Egg yolks
Set gently with the warm rice to bind the mixture and enrich its texture.
Milk
Adds moisture and softness, cooking the rice into a tender, spreadable mass.
Butter
Adds fat for richness and a smooth, tender mouthfeel.
Powdered sugar
Sweetens the mixture and helps the exterior brown when fried.

The step that matters

Stir in the egg yolks without boiling. Egg yolks thicken when heated gently but curdle and turn grainy if they get too hot. Keeping the mixture below boiling keeps it smooth and binds it evenly.

Swap the orange

How well each one fits the dish's main ingredients (rice, lemon, sugar, butter, milk, egg, bread):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Orangethe original

Fit is the average pairing score against rice, lemon, sugar, butter, milk, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
