A Good French Rice Pudding, or gAtEA 7 De Riz

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the rice

  1. In a pot, gently swell the rice in the milk (or milk and cream) until tender.

  2. Add butter, sugar, salt, and lemon rind, and simmer until the rice is fully swollen.

Prepare and bake

  1. Let the mixture cool slightly, then prepare a small copper stewpan by coating it with clarified butter.

  2. Sprinkle fine bread crumbs in the pan, shaking off the excess.

  3. Whisk the rice mixture gently, then pour it into the prepared stewpan.

  4. Bake in a moderate oven at 350°F (175°C) for about 1 hour.

Serve

  1. Serve with boiling milk or cream poured over it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carolina rice
Swells in the milk to form the pudding's soft, starchy body.
Milk
Cooks with the rice to create the creamy, tender base of the pudding.
Fresh butter
Adds richness and a silky mouthfeel to the finished pudding.
Sugar
Sweetens the pudding and helps it brown lightly in the oven.
Light crumbs of stale bread
Coats the pan so the pudding releases cleanly and browns at the edges.

The step that matters

Simmering the rice until fully swollen. Rice must absorb the liquid and soften completely before baking; undercooked grains stay firm and the pudding turns out gritty rather than creamy.
