Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk and a soft, moist body for the pudding.
Egg yolks
Add richness and help bind the mixture as it sets.
Egg whites
Whipped to foam, they lighten the texture and help the pudding rise.
Almonds
Add nutty flavour and a slightly crunchy texture.
Granulated sugar
Adds sweetness and helps tenderise the custard-like texture.

The step that matters

Fold the whipped egg whites gently. Stirring or deflating the foam removes the air that lightens the pudding, leaving it dense instead of light and airy.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, lemon, almond, bread):

  1. Arrowrootfits better
  2. Asparagusfits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, lemon, almond, bread. Candidates are from the same food group and used in at least 100 recipes.
