Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks bind the batter and whites, folded in last, lighten its texture.
Stale bread crumbs
Soak up the hot milk and give the pudding its body.
Beef suet
Adds fat that keeps the pudding moist and rich in texture.
Raisins
Provide chewy texture and concentrated sweetness throughout the pudding.
Sugar
Adds sweetness and helps keep the pudding moist.

The step that matters

Fold in the beaten egg whites. Folding gently keeps the air beaten into the whites, which helps the pudding rise and stay light. Stirring hard would deflate the batter and make the pudding dense.

Swap the mace

  1. Clovefits better
  2. Allspicefits better
  3. Cardamomfits better
