Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites lighten the batter and help the fritters puff and hold their shape.
Bread crumbs
Soaked in hot milk, they form the body of the batter and give the fritters their tender crumb.
Currants
Dried fruit that adds pockets of sweetness and chew throughout the fritters.
Flour
Helps bind the batter and lightly dusted currants stay suspended instead of sinking.

The step that matters

Folding in the currants and egg whites. Egg whites hold air that gives lift, so folding gently keeps them from deflating. Currants dusted with flour are less likely to sink and sit evenly in the batter.

Swap the currant
