Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the custard base

  1. Break the stale bread into pieces and place in a bowl.

  2. Pour the boiling milk over the bread and add the butter.

  3. Cover the dish tightly and let it cool.

  4. Mash the mixture until fine with a spoon.

  5. Stir in the cinnamon, nutmeg, sugar, and baking soda dissolved in a little hot water.

  6. Beat the eggs until light and add them to the mixture.

Bake and serve

  1. Pour everything into a well-buttered pudding dish.

  2. Bake at 350°F (175°C) for 45 minutes.

  3. Serve warm with hard sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Soaks up the milk and gives the pudding its body.
Eggs
Set during baking to bind the pudding into a sliceable custard.
Milk
Softens the bread and forms the liquid that the eggs set into custard.
Sugar
Adds sweetness and helps the top brown during baking.
Butter
Adds richness and fat that softens the texture.

The step that matters

Beat the eggs until light and add them to the mixture.. Eggs are the main setting agent. Well-beaten eggs blend evenly into the cooled bread mixture, so the pudding sets smoothly instead of in streaks or curds.
