  1. Cream together the butter and sugar.

  2. Beat the eggs until light.

  3. Scald the milk in a saucepan; when it boils, add half of the beaten eggs and stir frequently until it curdles.

  4. Stir in the grated bread and mix well.

  5. Gradually add the butter and sugar mixture and the remaining eggs.

  6. Add the brandy, wine, rose-water, cinnamon, and nutmeg.

  7. Sprinkle 2 ounces of currants with flour and mix into the batter.

  8. Pour the mixture into a square tin lined with puff pastry.

  9. Sprinkle the remaining currants with flour and place them on top.

  10. Leave a flap of pastry on each side, cut slits in the flaps, and fold them over the top.
