A French Rice Pudding, or Gateau De Riz

Oven, in the book's wordsA very slack oven

Ingredients

Directions

The book says “a very slack oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the rice base

  1. Heat the milk (or milk and cream) gently in a pot and add the rice.

  2. Cook until the rice is tender.

  3. Stir in the butter, sugar, salt, and lemon rind.

  4. Simmer until the rice is fully swollen.

  5. Remove from heat and let cool slightly.

  6. Gradually stir in the beaten egg yolks.

Prepare the pan

  1. Coat a small copper stewpan with clarified butter.

  2. Sprinkle stale bread crumbs over the pan, shaking off excess.

Bake

  1. Whisk the egg whites until stiff peaks form.

  2. Gently fold the egg whites into the rice mixture.

  3. Pour the mixture into the prepared stewpan without disturbing the bread crumbs.

  4. Bake in a moderate oven at 350°F (175°C) for 1 hour until browned and firm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard base while whipped whites lighten and set the pudding structure.
Rice
Starch swells in the milk, giving the pudding its body and creamy, tender texture.
Milk
Provides the liquid that the rice absorbs and that sets with the eggs into a custard.
Butter
Adds richness and fat, contributing to a tender crumb and browned crust.
Sugar
Sweetens the pudding and helps the surface brown during baking.

The step that matters

Folding the egg whites. Whipped whites trap air that gives lift; overmixing deflates them, leaving a dense pudding. Fold gently, just until no white streaks remain.

Swap the lemon

How well each one fits the dish's main ingredients (milk, rice, butter, sugar, egg, bread):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against milk, rice, butter, sugar, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
