Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set firm as it steams.
Bread crumbs
Provide body and soak up the liquid to give a soft, moist crumb.
Beef suet
Adds richness and fat that keeps the pudding moist and tender.
Milk
Adds moisture and loosens the batter so it blends evenly.
Apricot marmalade or jam
Adds sweetness and fruity flavour, with some moisture.

The step that matters

Steam for the full time. Steaming gently and for the full 1.5 to 2 hours cooks the eggs and starch through, so the pudding sets firm rather than wet or sunken in the centre.

Swap the lemon
