Ingredients

Directions

The book says “a moderately quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Soak the bread crumbs in milk for 20 minutes.

  2. Beat the eggs and sugar until light.

  3. Stir the egg mixture into the soaked bread crumbs thoroughly.

Assemble and bake

  1. Line two pie tins with pie crust and cover the bottom with seedless raisins.

  2. Add cinnamon to the mixture and pour it into the pie tins.

  3. Bake at 400°F (200°C) for 25 minutes.

What each ingredient does

Bread crumbs
Absorb the milk and form the body of the filling.
Eggs
Bind the filling and help it set as it bakes.
Milk
Softens the bread crumbs and adds moisture to the custard-like filling.
Sugar
Adds sweetness and helps the beaten eggs stay light.
Seedless raisins
Add pockets of sweetness and chewy texture in the base.
