What each ingredient does

Egg
Binds the batter and adds structure as the pudding sets.
Baking soda
Reacts with the molasses to lighten the pudding and help it rise.
Graham flour
Forms the bulk of the batter and gives the pudding its body and coarse, nutty texture.
Molasses
Adds sweetness, dark color and moisture, and its acidity activates the baking soda.
Melted butter
Adds fat for richness and a tender crumb.
