Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove the seeds from the plums and mince them very fine.

  2. Butter a dish and add a layer of plums.

Layer and bake

  1. Sprinkle the plums with cinnamon, sugar, and small pieces of butter.

  2. Cover the plums with bread crumbs.

  3. Alternate layers of fruit and crumbs until all ingredients are used, finishing with a layer of crumbs.

  4. Do not add water; cover tightly and steam for 1 hour in a 350°F (175°C) oven.

  5. After 1 hour, remove the cover and brown quickly.

Serve

  1. Serve with cream or sweet sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Plums
Provide the main fruit and moisture that steams the dish as it bakes.
Bread crumbs
Absorb the plum juices and form a soft layered texture that browns on top.
Butter
Adds richness and helps the top crumbs brown in the oven.
Sugar
Sweetens the tart plums and helps the top brown.

The step that matters

Covered steaming before browning. Keeping the dish covered for the full hour traps steam so the fruit softens and the crumbs absorb its juices. Removing the cover too early can leave the plums firm and dry, while browning only at the end sets the crumb top without overcooking the fruit.

Swap the plum

How well each one fits the dish's main ingredients (butter, cinnamon, sugar, bread, cream):
