Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread crumbs
Soak up the hot milk and give the pudding its body and soft crumb.
Eggs
Bind the mixture and, as whipped whites, add lightness to the dense pudding.
Beef suet
Adds richness and fat, keeping the steamed pudding moist and tender.
Sugar
Adds sweetness and helps balance the spices and brandy.
Raisins
Add chewy texture and concentrated fruit sweetness.

The step that matters

Fold in the beaten egg whites. Folding keeps the whites' trapped air intact, which lightens the heavy batter; stirring them in vigorously knocks the air out and leaves the pudding dense.

Swap the mace

How well each one fits the dish's main ingredients (bread, wine, brandy, sugar, milk, nutmeg, cinnamon):

  1. Clovefits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against bread, wine, brandy, sugar, milk, nutmeg, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
