Brandy Snaps

Oven, in the book's wordsA moderately quick oven

Ingredients

Directions

The book says “a moderately quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a saucepan, combine the butter, sugar, and molasses. Stir until it boils, then let it boil for 1 minute.

  2. Remove from heat and let it cool.

  3. Sift in the flour and spices that have been mixed together. Stir well.

  4. Turn the dough onto a pie plate to about 1 inch thick and refrigerate overnight.

  5. Roll the dough thin and cut with a 3-inch round cutter.

  6. Bake on ungreased pans in a moderate oven at 350°F (175°C).

  7. Once baked, roll each piece around a smooth stick about ½ inch in diameter. Slip off when cool.

  8. Store in an airtight box.
